Wild Rice with Toasted Almonds and Dill

1 box McFadden Farm Wild Rice
1 shallot (minced)
1 small clove garlic (smashed with a pinch of salt)
1/2 cup of red wine vinegar
Juice from 1/2 orange
1 Tbsp Dijon mustard
1/4 fresh chopped dill, plus more for garnish
1 Tbsp honey
1 cup olive oil
Salt n pepper to  taste

1 cup golden raisins
1/2 cup toasted almonds

Rinse rice thoroughly. Bring large pot of salted water to rolling boil. Add rice. Continue at full boil with lid off for 40 minutes or until grains are tender. Drain. Dress with Red Wine & Dill Vinaigrette.

Meanwhile, combine shallot, garlic, red wine vinegar, orange juice, dijon, dill, honey, salt and pepper in a jar and slowly stir in the olive oil to create the dressing.

Soak golden raisins in the dressing before tossing over the rice. Garnish with toasted almonds and fresh chopped dill. Serve and enjoy!
