McFadden Crab & Wine Fest Creamy Crab BisqueIngredients
1 TBS. Clover butter
1 TBS. Mediterranean Blend*
1/2 sweet onion, minced
2 cloves McFadden Farm premium garlic, minced*
3 cans 15 oz Bar Harbor all natural fish stock
3 cups Clover heavy cream
1 TBS McFadden Farm Organic Seafood Herb Blend*
Kosher salt and freshly ground white pepper, to taste
1 1/2 lb. fresh crab meat, picked from three large Dungeness crabs.
1⁄2 cup Blue Quail Gewurztraminer*
Minced chive for garnish
In a large soup pot over medium heat, melt the butter with the oil. Add the onion and McFadden premium garlic and sauté until translucent, 2 to 3 minutes. Add the stock and cream, and season with McFadden Seafood Herb Blend, kosher salt, and white pepper. Bring to a simmer.
Reduce the heat to low and stir in the crab meat. Cook until heated through, about 5 minutes. Stir in the Gewurztraminer and heat for 2 to 3 minutes. Taste and adjust the seasonings. Ladle the soup into warmed shallow bowls and garnish with freshly cut chives. Serve immediately. Serves 8.
